🔹 For Ube cake Whipped Cream Frosting:

  • 2 cups heavy whipping cream, cold

  • ¼ cup powdered sugar

  • 2 tbsp ube halaya (smooth)

  • ½ tsp ube extract (for stronger color/flavor)

🟣 1. Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Grease and line two 8″ cake pans with parchment paper.

🟣 2. Dry Ingredients

  • In a bowl, sift together flour, baking powder, and salt.

🟣 3. Wet Mixture

  • In another bowl, whisk egg yolks, sugar, oil, ube halaya, ube extract, vanilla, and milk until smooth.

  • Gradually add dry ingredients into wet. Mix just until smooth.

🟣 4. Meringue (Egg White Mixture)

  • Beat egg whites and cream of tartar on high speed until foamy.

  • Slowly add ¼ cup sugar, beating until stiff peaks form.

  • Gently fold meringue into ube batter in 3 parts using a spatula.

  • Pour batter into pans and bake for 25–30 minutes or until toothpick comes out clean.

  • Cool completely before frosting.


🍰 Whipped Ube cake Frosting:

  • Beat cold whipping cream with powdered sugar until soft peaks.

  • Add ube halaya + ube extract, then beat until stiff peaks.
