💜 What is Ube cake?
Ube (pronounced “oo-beh”) is a purple yam popular in Filipino desserts. It has a sweet, nutty, vanilla-like flavor and a naturally bold purple color that makes this cake visually stunning and delicious.
🧾 Ingredients:
🔹 For the Ube Cake:

2 cups cake flour

2 tsp baking powder

½ tsp salt
-
1 cup sugar
-
½ cup vegetable oil
-
5 egg yolks
-
¾ cup ube halaya (purple yam jam, available at Asian stores or homemade)

1 tsp ube extract
-
1 tsp vanilla extract
-
¾ cup whole milk
-
5 egg whites
-
¼ tsp cream of tartar
-
¼ cup sugar (for egg whites)
🔹 For Ube cake Whipped Cream Frosting:

2 cups heavy whipping cream, cold

¼ cup powdered sugar
-
2 tbsp ube halaya (smooth)
-
½ tsp ube extract (for stronger color/flavor)
👩🍳 Instructions:
🟣 1. Preheat & Prep

Preheat oven to 350°F (175°C).

Grease and line two 8″ cake pans with parchment paper.
🟣 2. Dry Ingredients

In a bowl, sift together flour, baking powder, and salt.
🟣 3. Wet Mixture
-
In another bowl, whisk egg yolks, sugar, oil, ube halaya, ube extract, vanilla, and milk until smooth.

Gradually add dry ingredients into wet. Mix just until smooth.
🟣 4. Meringue (Egg White Mixture)

Beat egg whites and cream of tartar on high speed until foamy.

Slowly add ¼ cup sugar, beating until stiff peaks form.

Gently fold meringue into ube batter in 3 parts using a spatula.
🟣 5. Bake

Pour batter into pans and bake for 25–30 minutes or until toothpick comes out clean.

Cool completely before frosting.
🍰 Whipped Ube cake Frosting:

Beat cold whipping cream with powdered sugar until soft peaks.

Add ube halaya + ube extract, then beat until stiff peaks.
🎨 Assembly:

Slice cake layers evenly if needed.
-
Spread frosting between layers, over top and sides.

Decorate with ube crumbs, fresh fruit, or purple flowers!
